Rethinking Sweetness: New Global Tools Empower Sugar Reduction in Food Innovation

As global health concerns mount over excess sugar consumption, the Institute of Food Technologists (IFT) has stepped up with a set of game-changing tools to support food and beverage professionals in developing healthier, reduced-sugar products. This is particularly relevant as more consumers—including in Nigeria—demand foods that deliver on taste without compromising health.

IFT recently released two powerful resources:

  • Sugar Alternatives At A Glance” – a quick, high-level guide covering 19 sugar alternatives, from aspartame and sucralose to stevia and xylitol. It includes sweetness comparisons, derivation sources, and regulatory insights.
  • Sugar Alternatives Overview” – a deeper dive for IFT members, exploring scientific studies, real-life substitution considerations, and common use cases for each sweetener.

To complement these, IFT also curated a free special journal collection, Alternative Sweeteners and Sugar Reduction, featuring in-depth research on sweetness perception, sensory acceptance, human physiological responses to sweeteners, and reformulation strategies for reduced-sugar foods.

These tools are designed to simplify product development by helping manufacturers choose the right sugar substitutes without sacrificing taste or safety. The initiative comes as part of IFT’s broader mission to support a more sustainable, nutritious, and accessible food system.

The global spotlight on sugar reduction continues at IFT FIRST 2025, happening July 13–16 in Chicago, where the session titled “Reimagining Flavor: Reducing Fat, Salt, and Sugar for Healthier Foods” will gather top scientists and innovators to share cutting-edge solutions for healthier food reformulation.

Lowering added sugar in food products isn’t just a global trend—it’s a health imperative for Nigeria’s fast-evolving food environment. As lifestyle diseases surge, local food producers must take bold steps to reformulate, innovate, and educate.
